I am a rich and powerful blue cheese from the wooded mountains of Picos de Europa. I’ve been wrapped in sycamore leaves and matured in natural limestone caves. The strongest blue on the market, with a wonderful sweetness.
Made in the valley of León from cow´s and goat´s pasteurised milk. From cured to semicured cheese.Irregular, rough and dark grey rind. Its inside is close and soft texture and grooved by corridors where white and green-blue mould grows. Strong flavour, aromatic, full fat and buttery taste.
Ingredients: 80% min. Pasteurised Cow's MILK, 10% min. Pasteurised goat MILK, salt, Stabilizer: calcium chloride, rennet,
Cheese Cultures and Penicillium.
