Old Winchester Mature
I have been matured for 18 months, being similar to a mature gouda in style, with a dry crystalline texture, being full and robust in flavour.
At least 6 months further matured than Winchester, Old Winchester is a dryer, firmer cheese with a distinctive nuttiness in flavour.
