I am a European-inspired firm cheese made in Lynher Dairies in Cornwall, made with pasteurised milk from the Ayrshire herd. A fudgy, aged Gouda-style texture pairs with my balanced savoury-sweet flavours and nutty, caramel aromas to create a sensational experience. I am aged for up to 22 months, allowing me to develop complex flavour and crystals which make for a delightful addition to your cheeseboard.
It is recommended that you pair me with honey and walnuts or pinot noir.
I am handmade in Cornwall.
